Crème Brûlée with Mint Cookies

Crème Brûlée
1/2 C Egg Yolks
2 1/2 oz. Sugar
1 tsp Vanilla Extract
2 C Heavy Cream
1 1/2 C Fresh Berries

Cook yolks and sugar in double boiler until thickened to mayonnaise stage. Boil cream and vanilla extract and add to yolk mixture. Cook until it thickened and clings to spoon slightly (2 minutes at most). Pour into ramekins filled with fresh berries and chill.

Chocolate Mint Cookies
2/3 C Butter
1 C Sugar
1 Egg
1/2 tsp Vanilla Extract
1/2 tsp Peppermint Extract
1 1/2 C All-purpose Flour
2/3 C Cocoa Powder
1/4 tsp Salt

Cream butter and sugar. Add egg, vanilla & peppermint extracts. Add sifted flour. Roll into logs and chill. Cut and bake at 350 degrees for 7 minutes.
