Meet the Chef
Leading the innovative culinary team at Enchantment Resort is Executive Chef David Schmidt. He moved to Arizona from Wisconsin and after meeting his wife, whose family came from Mexico, he developed an appreciation for Southwestern-style cuisine.
Meanwhile, he studied Culinary Arts & Sciences and Restaurant Management at Scottsdale Culinary Institute, where he later returned to their Le Cordon Bleu College as Chef Instructor L'Ecole. Combining his teaching with work in hospitality hotspots around the state, Chef Schmidt continued creating flavor combinations that celebrate authentic regional cuisine.
Honored by Chaîne des Rôtisseurs as a Chef Rôtisseur, he believes in sourcing local ingredients. Locally grown produce and cheese from Arizona experts play a major role in his menu development, for which he constantly seeks out the freshest and best ingredients.
In addition, he reflects the Enchantment team's philosophy of involvement in charitable efforts by contributing time and talent to various causes. One example is Share Our Strength®, a national nonprofit devoted to ending childhood hunger in America by connecting children with the nutritious food they need to lead healthy, active lives. By participating in fundraising events like Taste of the Nation®, David helps give back to the world in which he's found creative satisfaction every time he develops a new menu specialty.
