Champagne Strawberry Truffles

Or, surprise your Valentine and make these delicious truffles at home.

12 oz. white chocolate, coarsely chopped
1/3 cup whipping cream
2 tablespoon champagne
1 teaspoon strawberry puree
Milk chocolate, to dip the centers in


o Melt white chocolate in a heavy saucepan on low, stirring constantly; stir in whipping cream.

o Stir in champagne and strawberry.  Pour into a shallow pan lined with parchment paper or foil.

o Refrigerate until mixture is thickened, but still soft, about 2 hours.

o Shape 1 tablespoon of the mixture by rolling into 1 1/4 inch balls. Place balls on waxed paper.

o Refrigerate until cold, then melt the milk chocolate and dip the centers and place on waxed paper.  Truffles can be refrigerated 2-3 days or frozen for several weeks.
